“We're not chasing the next weird thing. We're trying to make the same six beers a little better than we made them last year.”— on a chalkboard by the fermenters
Dale spent nine years brewing for a regional production brewery before he had enough of chasing volume and opened Copperline in a converted foundry building with a single 15-barrel system. The idea was small on purpose — a taproom you could walk to, a lineup you could learn by heart, beer that never had to survive a truck ride.
He's still the one signing off on every batch, and still the one behind the bar most Friday nights, pouring the beer he brewed that same week.
Grain from a mill upstate, hops from a farm we can drive to for the fresh-hop batch — the ingredient list stays short enough that Dale can name every farm on it.
No beer goes out the door before it's ready, seasonal demand or not. If a batch needs another week of conditioning, it gets another week — the tap just stays empty until then.
